Ingredients

  • 2 slices sourdough or country bread
  • 2–3 slices aged cheddar (naturally low lactose) OR Cabot Seriously Sharp Cheddar
  • 1–2 tbsp lactose-free butter (Challenge Dairy LF Spreadable Butter works great)
  • Optional: Dijon mustard, thinly sliced tomato

Instructions

  1. Butter one side of each bread slice generously.
  2. Place one slice butter-side down in a cold skillet. Layer cheese (and any add-ins) on top. Place second slice on top, butter-side up.
  3. Heat skillet to medium-low. Cook undisturbed for 3–4 minutes until bread is golden and cheese starts to melt.
  4. Flip carefully. Cook another 2–3 minutes until second side is golden and cheese is fully melted.
  5. Let rest 1 minute before cutting β€” it helps the cheese set slightly.

Notes

Aged cheddar (12+ months) is naturally very low in lactose β€” typically less than 0.5g per serving β€” and is safe for most lactose-intolerant people without any lactase supplement. The key to good grilled cheese: low heat and patience. High heat burns the bread before the cheese melts.
