Lactose-Free Panna Cotta

Ingredients
- 2 cups lactose-free whipping cream (Natrel or similar)
- ¼ cup sugar
- 1 tsp vanilla extract (or 1 vanilla bean, split)
- 2½ tsp unflavored powdered gelatin
- 3 tbsp cold water
- Topping options: mixed berry compote, caramel, or fresh fruit
Instructions
- Sprinkle gelatin over cold water in a small bowl. Let bloom for 5 minutes.
- Heat cream, sugar, and vanilla in a small saucepan over medium heat until sugar dissolves and cream steams — do not boil.
- Remove from heat. Add bloomed gelatin and whisk until completely dissolved.
- Strain into ramekins or glasses (about ½ cup each). Refrigerate at least 4 hours, or overnight.
- To unmold: run a thin knife around the edge, place a plate on top, and invert. Serve with berry compote.
Notes
Panna cotta is a naturally elegant dessert with only three main flavors — cream, vanilla, and gelatin — so the quality of your LF cream matters. Lactose-free whipping cream options are limited (Natrel is one brand), so if you can't find one, substitute half the cream with lactose-free whole milk and increase gelatin by ½ tsp for the same set.
